Frozen Cupcakes

Well mini ones! I made these the other day for a little girl's birthday party in Raheny.
I think mini cupcakes are ideal for kids parties, as they are .....erm....mini! Lot's of kids have a tendency to start big cupcakes and either abandon them, or lick the icing off and put them back. They don't do that with mini cupcakes, they just pop them in and leg it! The parents however, love the full size ones or just eat 3 mini ones!
