Rice Krispie Treats

These come with a warning they are messy and sticky to make! They are not hard though. Read the tips under the recipe and you'll be grand. I found this recipe on a google search years ago, it said it was a Debbie Brown recipe, she seems to be the queen of Rice Krispie Treats or RKT as cakey people call them ;-)

Ingredients:

  • 50 g butter
  • 200 g marshmallow
  • 160 g rice krispies

Method:

  1. Grease the container you are going to put the RKT in. I use an 8' square tin but any pyrex dish or tin should be fine.
  2. Melt butter in large saucepan over a low heat. .
  3. Add marshmallows and stir constantly until melted. Stir for a further minute then remove from the heat.
  4. Add the cereal and stir until well coated. Pour into greased pie dish or cake tin and press down firmly with either a greased spatula or wet/greased hands.
  5. Place in the fridge for an hour to chill.
  6. Cut into 2 inch squares.

Some @thecakemum observations/tips:

  • I use Tesco own brand Marshmallows and I cut them up, so that they melt quicker. I dip my kitchen scissors in boiling water and then halve some marshmallows. then dip and cut some more. You could also use mini Marshmallows,and skip the cutting step, I just have always used the big ones!
  • Use a very low heat and stir constantly once you put the marshmallows in. If you don't the mixture will stick and burn, which seems to happen quite quickly
  • Once the RKT are chilled, wrap them as tightly as you can in clingfilm, to prevent them going soft. They keep for a few days but are best eaten within 24 hours, in my opinion
  • The mixture is very messy and sticky. I wash my hands frequently and don't dry them when I'm making it. The mixture does not stick to wet hands. Some people grease their hands, but I find water does the job.
  • To make them extra special you can mix in M&Ms or some other small sweet or drizzle the RKT with melted chocolate.
